"Isang sisig nga po for take out!" Then one starts
to wonder, ulam or pulutan?
And the truth is Sisig is just as confused as heck as we all
are.
Sisig was supposed to be as manly as those tattooed tambays
in the kanto downing on gin-kalamansi, able to keep a straight face without
even the slightest flinch on every chug of tagay.
That's how astig the Sisig's primal course of fate was, in
fact, even the physics of sound will not allow you to utter the word sisig in
any sweet tone nor manner (you tried, didn't you? admit it, it does not sound
right does it?). Vocal chords revs up with vibrating roughness at every mention
of sisig as if telling everyone to shut up, sit down and listen.
But then, time changes all things, and even this commanding
pulutan general was not an exemption. Just like you, me and how we feel for
each other. Now, there's only a cloud of confusion, no doubts about love, but
confusion if it's me you truly love or him who stands secretly in the dark.

The rowdy Sisig became a canteen dish, a flag carrier of
group meals, was labeled a pinoy comfort food and was even considered perfect
for stress eating too. The sili became optional. The calamansi too. Raw eggs
cooking atop a sizzling sisig became a sight to behold. And as much as his
kapampangan roots wanted to stay truly pinoy, he was westernized by a slab of
mayonnaise.
People does not even know anymore that sisig means "to
make sour". Here he was adorned with different spices and ingredients when
all he knew was this, he is at his best given the simplest of recipe.
Sisig became a crowd pleaser in his disdain. Gents, Ladies,
young and old. Yet, over the years,
through all the confusion, he tried to understand and learn.
Aaah, perhaps this is life.
Though he was supposed to be in the ranks of Spain's Tapas,
France's Escargot, Canada's Poutine, Russia's Vobla, Scotland's Haggis and many
other gastropub foods around the world, Sisig learned to adapt, evolve and
exist to exceed his known identity, realizing that at times, one's purpose is
greater than one's identity.

Ambiguity in life, i wish you courage to lose your identity to live out your
purpose bravely, and regain back an improved version of yourself along the
process.
